Tomato Rice Pilaf


Once when i was making tomato rice I was wondering why cant i make it like a pulao or pilaf and check how it turnout. To my wonders it was so yummy and irresistible. Mainly i dint add more masala or spices to it, yet it was at its best :)

Preparation time: 5 mins + 30 mins Soaking time for Basmati Rice
Cooking time: Less than 30 mins
Serves : 2

INGREDIENTS:
  • Butter - 1 tbsp
  • Oil - 1 tbsp
  • Tomato - 3 medium / 4 small
  • chopped Onion - 1 cup
  • Ginger garlic paste - 1 tbsp
  • garlic powder - 1 tsp
  • Nutmeg powder - a pinch
  • Heavy Milk - 1/2 cup
  • Basmati (White long grain) Rice - 3/4 cup
  • Few Cashew nuts - for seasoning
  • Coriander leaves for garnishing
DIRECTION: 
  • take a Tava or a sauce pan which can be air tight or without any opening to release the pressure. 
  • Heat the tava add oil and butter (oil to keep the butter from burning) . then to that add cashewnuts, when they turn golden brown add ginger garlic paste and saute it for a minute.
  • Then add the chopped onions and fry them until they turn translucent . Then goes in tomatoes (chop them real nice so that they get mashed up real quick).
  • add salt, red chilli, nutmeg powder then close the lid for 5 mins. Let it be in the medium flame, don't let the tomato gravy burn.
  • Once the tomatoes are mashed up, add garlic powder, sugar and heavy cream to it and mix well and again cover it with the lid and leave on medium flame for 5 more mins.
  • Then drain the water from soaked basmati rice and drop in the rice to the mixture and mix well, add less than 1/4 cup of drained water to it.
  • Every 5 mins, give it a gentle stir with a fork (So that the basmati rice wont get mashed up, we want the grains to be separate) and add less water if necessary. 
  • Keep the lid tightly closed never burn the bottom, it spoils the taste. Its better to stand next to it until its cooked. Though it doesn't take a long time it need gentle care :D
  • Since we had soaked for basmati rice for at least 30 mins, it will be cooked in less than 15 mins.
  • Just make sure not to add too much water, it spoils the look :)
  • Finally garnish it with coriander (cilantro) leafs.
Serve hot with Onion Raitha :)!! Don't not exclude heavy milk, it truly enriches the taste !! Enjoy and let me know if you liked it
