Bhatoora

There are many different recipes online for making Bhatoora. All of them were good but with this recipe bhatoora fluffed up really really good. Sorry don't mind the shape the culprit was all purpose flour not me ;)

Preparation time: 10 mins
Waiting time: 2 hours at least
Cooking time: 15 - 20 mins
Serves - 4 / 5 bhatoora's

INGREDIENTS:
  • Maida / All purpose flour - 1 cup
  • Baking powder - 1/2 tsp
  • salt - to taste
  • Sugar - 1/2 tsp
  • Yogurt - 1/4 cup
  • Warm water - if necessary
  • Oil for deep frying and for drizzling on top of the dough
DIRECTION:

Preparing Dough:

In a large mixing bowl, sift in Maida / All purpose flour, baking powder and add salt and sugar to that then mix well. Then add in yogurt and knead the dough for at least 4-5 minutes until the dough is soft. If dough is too thick and not able to form a dough then add 1 - 2 tbsp's of warm water. Be careful while adding water.
Once the dough is prepared drizzle few drops of oil on top of the dough and cover it with a damp cloth / paper towel and leave it in a warm place to rest atleast for 2 hours.

Note: You can also add 2-3 tbsp's of semolina while kneading the dough to make it slightly crispy and stay fluffed up for a while.

Making Bhatoora's:

In a Wok add oil and heat it.

Make small dumplings in the dough (size as you desire, just make sure it has enough place to float in the wok) and flatten it up with hand and grease the surface where you are going to make bhatoora. Roll equally around all the edges and drop them gently into the oil. Before it comes up using a ladle press it gently around the surface of bhatoora.
Once it fluffs up wait for it to be cooked on that side then turn over and cook the other side.

Note:  The sides won't be cooked, slowly turn through the edges so that the sides will also be cooked, if you are unable to turn carefully pour some oils to the sides while the frying the bhatoora's.
Change sides / take them out when they start to turn golden color .

Serve Hot with Channa / chole masala !
