Carrot Kosumburi (carrot salad)


This is one of the simplest and yummy accomplishment or salad you can make in no time. It tastes great when had alone or with rice and sambar. I love carry this way, it has a super tangy flavor. Generally Kosumburi includes lentil like moong dal. But i am not a fan of this dish with lentil. It is much simpler without lentil and tastes the same ;)

Preparation time: 5 mins
cooking time : Less than 10 mins
Servers : 2

INGREDIENTS:
  • Carrot - 3 - 4 (Grated)
  • Lemon / Lime - 1/2 
  • Green chilli - 2  (Finely chopped)
  • Shredded coconut - 3 tbsp
  • Coriander leaves - few strands 
  • sugar - 1/4 tbsp
  • salt - to taste 
For Seasoning :
  • Oil - 1 tbsp
  • Mustard - 1 tsp
  • Urad dal - 1 tsp


DIRECTION:

In a bowl grate carrot mix together shredded coconut , sugar, salt and lime juice and keep it ready.
In a pan heat oil add mustard seeds and urad dal wait for it to splutter to that add green chilli. Then switch off the stove and add the carrot mix to the tempering..

TADDDAAA !!! :) Its ready. Finally garnish it with coriander leaves!!
