Samosa (Fried Pastry with Savory Filling)


I have not seen even one restaurant menu without this famous appetizer / snack in it. I am a samosa fan I just love the crunchy corners and nice flavored spicy filling inside.

There are many ways to do a samosa filling, I chose to update the one which is very simple and can be made in less than half hour. Yes its true, one evening my husband called me from office and said 'prasha I'm feeling hungry , surprise me with some snack' ! Guess what I love the word surprise and immediately this recipe came to my mind. My husband came home in 30 mins and it was ready by then :)

Preparation time: 10 mins
cooking time: 20 mins
serves - 4 - 6 samosas (depending on the size)

INGREDIENTS:


To make the dough:
  • All purpose flour/ Maida - 1 cup
  • Carom Seeds (Ajwain / Omam) - 1 tsp
  • salt - a pinch
  • water - as needed
For the Filling:
  • Potato - 2 medium or 5 - 6 small one's
  • cashewnuts - crushed 2 tbsp
  • Oil - 1 tbsp
  • Red chilli powder - 1 tsp
  • coriander and cumin seeds - 1 tsp (Roasted and crushed)
  • salt - to taste

DIRECTION:


Heat the oil to fry the samosa.

Boil Potatoes:

In a heavy wok / pan boil the potatoes in water or put them in microwave high for 5- 6 mins.

Make Dough
Meanwhile in a mixing bowl add all purpose flour, salt and ajwain (carom seeds) and make a tough dough adding a tbsp of water at a time. Once the dough is made leave it the counter for 10 mins.

Make Filling:




Once the potatoes are done, cool them by showing on the running water and peel the skin off and cut or smash them into small chunks. In a pan add a oil and to that add roasted and crushed coriander and cumin seeds once they turn color add cashew nuts and let those too turn into golden color. Then to that add smashed potatoes, salt and red chilli powder and saute for couple of minutes until raw smell is gone.

Making the samosas:





Seperate the dough into 6 or as many equal parts as you want depending on the size of the samosa and take a piece of dough and spread as you make chapathi / phulka and cut them in the middle. One circle make two samosa's so eyeball the size of the samosa you wish from the size of the semicircle.

Now you will have two semicircles take one and mark center of the horizontal side of the circle and cross them over to make a triangle. Once you made a triangle close the bottom edge by pressing on the tip.





With the help of spoon fill the inside the triangle and close the horizontal edge too.


Finally drop them in the oil and fry them until they turn nice golden color and crispy.
You can fill all samosa's and fry them in batches or can make one by one depending on how comfortable you are.
I just made medium sized samosa's so that it will be cooked easily. Once you take out of the oil drop them in paper towel and drain excess oil.

Serve hot with Mint chutney or Ketchup.
